Growing up in Hawaii, I was instilled a profound appreciation and responsibility for the land, sea, and all living creatures. My father managed The Chart House restaurant(s) across Hawaii, and I have cherished memories of spending time in the kitchens from an early age. There, I watched and learned from the chefs about the art of food preparation—transforming simple ingredients like a potato into something extraordinary and the joy of crumbling a giant roll of blue cheese for a dressing. This culinary adventure was reinforced when my family moved to New Mexico during my high school years. Opening my understanding of food to be deeply cultural, rich with flavors and variety beyond my imagination. When I joined the Navy and traveled the world I learned there would be no end to unique culinary experiences!
These two passions—culinary arts and environmental stewardship—have beautifully merged with this current project. I am excited to utilize a historic culinary dish from around the world, combined with the international supply chain, to reinvent and reimagine Tabbouleh today.
I founded Pita Pyramid in 2022 to address the growing demand for whole food-based dining experiences. Our small menu is designed to offer delicious, nutrient-dense options for all diets, while staying economically viable in a challenging food economy.
